Greek Yogurt Muffins

What I love about this recipe is how easy and versatile it is! My daughter and husband devour these muffins for breakfast, snack time and dessert.


Ingredients:

  • 2 cups all purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 eggs

  • 1 stick of butter

  • 1/2 cup maple syrup or honey

  • 1 cup greek yogurt


Steps:

  1. Mix flour, baking powder, baking soda and salt in bowl.

  2. In a separate bowl, combine the yogurt, vanilla extract, eggs, butter, and maple syrup and mix it together using a mixer until creamy and well blended.

  3. Gradually add in the flour mixture and combine to blend using the mixer until the batter becomes thick.

  4. Pick your mix-ins. Any fruit, nut or candy is fair game! I have had made these many different ways and they always turn out great. Use a wooden spoon to mix in.

  5. Grab a muffin tin to add in your batter and bake the muffins for about 15-20 minutes at 350 degrees. Use a tooth pick to check the center to see if the muffins are done before enjoying!
