What I love about this recipe is how easy and versatile it is! My daughter and husband devour these muffins for breakfast, snack time and dessert.
Ingredients:
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
2 eggs
1 stick of butter
1/2 cup maple syrup or honey
1 cup greek yogurt
Steps:
Mix flour, baking powder, baking soda and salt in bowl.
In a separate bowl, combine the yogurt, vanilla extract, eggs, butter, and maple syrup and mix it together using a mixer until creamy and well blended.
Gradually add in the flour mixture and combine to blend using the mixer until the batter becomes thick.
Pick your mix-ins. Any fruit, nut or candy is fair game! I have had made these many different ways and they always turn out great. Use a wooden spoon to mix in.
Grab a muffin tin to add in your batter and bake the muffins for about 15-20 minutes at 350 degrees. Use a tooth pick to check the center to see if the muffins are done before enjoying!
