Croatian Cheese Crackers

This recipe was taken from "Croatian Savoury Baking" by Andrea Pisac. This cookbook really has some amazing traditional Croatian recipes and I highly recommend it to anyone looking to dive into the world of balkan pastries, breads and snacks!



Ingredients:

  1. 2 cups all purpose flour

  2. 1 tsp salt

  3. 1/2 tsp black pepper

  4. 1/2 tsp red paprika powder

  5. 1/2 tsp baking powder

  6. 2/3 cups unsalted butter, cold, and cubed

  7. 2 egg yolks

  8. 1 cup finely grated fresh parmesan cheese


Steps:

  1. Add flour, salt, black pepper, red paprika and baking powder into a bowl. Mix together to blend evenly.

  2. Knead the butter cubes in the dry ingredients until the mixture becomes crumbly. This step may take awhile!

  3. Add the egg yolks into the crumbly mixture and continue to knead the mixture.

  4. Toss in the grated cheese and knead to form a ball. Wrap it in cling wrap and place it in the refrigerator for 30 minutes.

  5. Preheat the oven to 410 degrees.

  6. After 30 minutes, take the dough out of the refrigerator and divide the dough ball in half or thirds. Place parchment paper down on your counter and begin to roll the dough out using a rolling pin. This may take a few tries as the dough does tend to fall apart at the edges so don't be afraid to really knead it back into a ball a few times so that the butter can help it stick together.

  7. Once the dough is rolled out, cut it into squares or rectangles.

  8. Take a fork to score the crackers with holes.

  9. Place the crackers with the parchment paper onto a baking sheet and cook the crackers for about 15 minutes or until the edges are golden brown.
