Banana Bread Recipe

This banana bread recipe is simple and has no dairy or refined sugar! I of course had to add a scoop of vanilla ice cream to mine when it came out of the oven given how hot the central Texas summer heat is right now, but the banana bread is delicious and moist without it as well.


Ingredients:

  • 3 ripe bananas

  • 1 cup unsweetened no sugar added applesauce

  • 1 cup maple syrup or honey

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • 2 cups all purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt


Instructions:

  1. Peel the bananas and mash them up in a large mixing bowl.

  2. Add the applesauce, eggs, cinnamon, vanilla extract and maple syrup to this same mixing bowl.

  3. Use a mixer to throughly blend these ingredients together in the large mixing bowl.

  4. In a separate mixing bowl, add the flour, baking powder, baking soda and salt and stir.

  5. Gradually add the flour mixture into the larger mixing bowl that contains your banana mixture, continuing to mix ingredients together until completely blended.

  6. Use a standard bread loaf pan to pour your mixture into ensuring that it is lightly greased with butter or oil before adding it in.

  7. Set the oven to 350 degrees and bake for 40-45 minutes. I usually watch it while it bakes and use a toothpick to test the center several times as it bakes so that I can take it out before it gets too dry.
